Each arm has different idle, damage and death animations. So you can make it so the player can destroy each arm one by one and then kill the beholder.

I am pretty sure those are Spectators not Beholders
Do you have the animations shown in the preview? If so, could I have them(I've bought the pack)?
Everything you see is included in the pack as sprite sheets. So there are no gif or unity animation files but there are png files with all the animation frames.
